Our organic cacao nibs are fermented at low temperatures and then dried gently in the sun. This careful processing means they never get warmer than 40°C. Regular cacao products are roasted at high temperatures but raw cacao is always processed with controlled fermentation and drying. Keeping the cacao at strictly low temperature preserves the enzymes and nutrients in the beans.
When you roast cacao beans they take on a distinctive roasted flavour which makes for great baking. If you prefer roasted cacao then try our organic natural cacao powder. Whether you choose raw or roasted, neither is alkalized and all our cacao products are organic, GMO free and bursting with flavour.
Cacao contains over 300 nutritional compounds and is particularly rich in plant polphenols. The most beneficial of these polyphenols are called flavonoids which have an antioxidant action.
